Geisha is one of the most renowned coffee varieties worldwide, celebrated for its delicate structure and distinct aromatic expression. At Las Brisas in Pitalito, Huila, Brayan Smith cultivates this variety at 1,800 – 1,850 m.a.s.l., where volcanic soils and cooler temperatures create ideal growing conditions. Only fully ripe cherries are selected before being hand-sorted and floated to remove defects. The coffee then undergoes a controlled 30-hour underwater fermentation following Cofinet’s protocol, a method designed to enhance clarity and preserve the variety’s naturally refined profile. After pulping and washing, the coffee is dried carefully on raised beds to maintain nuance and precision in the final cup.
